Before harvesting, the leaves are shaded for three weeks to enhance their concentrated yet delicate aromas. As a result, Miumori Matcha is not bitter; instead, it showcases a rich umami flavor with sweetness and fruity notes. This matcha is cultivated by the Hayashi family in Kirishima, where the tea plantation is surrounded by the Kirishima mountains, often shrouded in mist that makes the peaks appear like islands (kiri = mist, shima = island).
